Our radiant sunshine, Amy Minson Olive, returned home to her Heavenly Father on June 20, 2025, at the age of 47. She passed peacefully in her home in West Jordan, Utah, surrounded by her beloved family. Though cancer touched her body, it never touched her soul. Amy did everything she could to stay with us for as long as she could — not out of fear, but out of love. She always knew that when her earthly mission was complete, she would be called home, and she met that moment with grace, faith, and peace.
Amy was born on February 20, 1978, in Portland, Oregon to Sam and Marion Rex Minson, where she was instantly nicknamed our “sunshine baby.” She grew up bringing light, laughter, and a spark of determination to every room she entered. Amy graduated from Rim of the World High School in 1996, where she played three years of varsity basketball and cultivated a lifelong love for sports, especially volleyball — a passion she passed on to her children, who continue to carry that gift forward.
A woman of many talents and relentless ambition, Amy completed cosmetology school in 2000 and intimidated other hairdressers with her natural brilliance in her craft. Later in life, she returned to school with fierce determination, graduating as valedictorian with her associate degree in nursing in 2020 and earning her bachelor’s degree in 2022. Her patients, classmates, and coworkers were continually inspired by her intelligence, compassion, and radiant energy.
Amy was a writer, a dreamer, and a doer. She finished a novel that her children treasure, proud that she left behind her words for them. She was a talented scrapbooker who documented joy, a beautiful woman who never shied away from a camera, and a master cake-baker whose creations graced birthdays, weddings, and everything in between. She won singing competitions with her powerful voice and magnetic presence, and still found time to run a half marathon — just one more proof of her unstoppable nature.
She was also an artist in every sense of the word. Her talent extended beyond cakes to arranging flowers and, perhaps her favorite, decorating her home. Whether it was a normal Tuesday or a festive holiday, Amy transformed her home into a place of beauty, peace, and celebration. Long before she was married, she made handmade Christmas ornaments that are still treasured today. She was meticulous, thoughtful, and loved beautiful things — because she saw and created beauty in everything around her. The world is simply more beautiful because she was in it — especially through the unmatched beauty of her soul.
She was an accomplished amateur fisherman, a beach girl at heart, and a seasoned traveler. Amy explored the world with awe and joy — from Tonga (her favorite), to Spain, Canada, Mexico, Hawaii, Alaska, and the Caribbean. Wherever she went, she collected memories, not things.
Amy loved movie nights with her family, especially cuddled up with her kids. She was a phenomenal cook, an even better baker, and a soulful singer whose joy overflowed into every note and every room. She was joyful, silly, spiritual, strong, and full of fire. Her life was rich, not just in experiences but in the depth of love she gave to everyone around her.
Amy had a deep and personal relationship with her Savior, Jesus Christ. She leaned on Him in her hardest hours and felt His presence again and again — in quiet moments, in answered prayers, in miracles both small and great. We know He hugged her many times in this life… and now, finally, she can hug Him back.
Amy is survived by her eternal companion and sweetheart, Spencer Olive, and the five children she adored: Jacob (21), Camilla (19), Marley (16), Kalia (13), and Sophie (9). She is also survived by her loving parents, Sam and Marion Minson; her strong and faithful mother-in-law, Lavinia Olive; her siblings: Darren Minson (Ana), Julieann Roberts (Mark), Emily Minson, Joshua Minson (Jenny), Jessica Nowers (Kip), and Rebecca Ruppe (Jeremy); her dear in-laws: OJ Olive, Luisa Tupola (James), Fatai MacKay (Logan)and Elden Olive (Christina); her favorite aunt, Susan Burnett; her beloved cousin, Rachel; along with many, many other loved aunts, uncles, and cousins whose lives she touched with joy and connection.
She is preceded in death by her cherished friend and sister-in-law, Camilla Olive, and her beloved father-in-law, Eli Olive.
Amy’s legacy is one of light, strength, laughter, and unshakable faith. She lived every day with intention and purpose, and she loved fiercely. Her life, though shorter than we hoped, was full — of accomplishments, of memories, and most of all, of love.
We rejoice in the knowledge that she is at peace, welcomed home with open arms, and that her light will continue to shine through all who were lucky enough to be loved by her.
Funeral services will be held on Monday, June 30, 2025 at 12:30 PM at the Stake Center on 8539 South 2200 West, West Jordan, Utah. You may visit with the family prior to services from 8:30 AM to 12:00 PM. Interment following services at Memorial Redwood Cemetery, 6500 South Redwood Road, West Jordan, Utah.
