Eufelia Q. Espinoza

Our wonderful, loving wife, mother, grandmother and great grandmother Eufelia Q. Espinoza “Honey” passed away on December 4, 2022. Mom was born in Antonito, Colorado on July 20, 1928 to Guadalupe and Bibiana Quintana. She was the baby of her family with three older sisters and one brother.
She grew up and attended school in Antonito and that’s where she found her forever love, Cicilio J. Espinoza, when he returned home to register for selective service. After “going together” for a time they married on July 30, 1951 at Our Lady of Guadalupe Catholic Church in Antonito. Mom supported Dad as he served in the Korean Conflict. They moved to Salt Lake City in 1954, after Dad was released from Active Duty. Together they raised two daughters, Doreen and Cecelia.
Her love of children inspired her to become a teaching assistant at Jackson Elementary in Rose Park. She started with kindergarten children and later on became an ESL (English as a Second Language) Assistant to many of the non-English speaking children in grades K-6. Over a period of 28 years, she made a huge impact in the lives of many children and their families. She is fondly remembered as “Mrs. Espinoza my teacher”. Many of her former students gave hugs and praise whenever they encountered her.
She enjoyed crocheting, reading, word searches, playing cards, singing and dancing with her forever love. Mom was active in her church as a catechism teacher, confirmation sponsor, carnival volunteer and as part of the church cleaning crew. Mom’s faith and devotion to the Virgin Mary was evident in her ability to be kind, patient and loving to those that were in need. She believed and practiced her faith with sincerity and integrity.
Eufelia is survived by her husband of 71 years, Cicilio Espinoza, two daughters: Doreen (Jack Wall) Espinoza, Cecelia ‘C’ (Albert) Serrano, five grandchildren: Erica, Daniel (Fernando), Kerry, Elario (Melissa), Alberto (Elizabeth), seven great grandchildren: Anthony, David, Liliana, Aria, Kaden, Noah and Brooks, and her sister: Alice Stolpman. She also had many nieces and nephews that were children of her heart. She was proceeded in death by her parents: Guadalupe and Bibiana Quintana, Sisters: Celia Romero and Leontina Garcia, and Brother: Thomas Quintana.
Funeral Services will be Saturday, December 10th, at St. Vincent’s Catholic Church 1375 E. Spring Lane, Murray UT. Rosary beginning at 9:30am, visitation will be from 10:00am-11:00am, followed by a Catholic Mass. Committal will take place at Memorial Redwood Cemetery, 6500 South Redwood Road, West Jordan Utah.
The family would like to thank the staff of Aspire Home Health for their care and compassion to our mom during her journey home.
